I'm sure a lot of parents will relate to this situation: you are in a hurry, 5 minutes late in fact, but it's lunchtime and your kid is hungry. It's your job to provide them with food and comfort. And ideally, it would be your only job. But we live in a fast-pace heck-tik world and sometimes multitasking is the only way to go.
To ease things up a bit I want to bring up the subject of quick and lazy no-brainers that could be a nice munch to your kid before you get to some real food or even become simple mess-free lunches that you can have on the go.
These snacks are not ground-breaking in any way, but there is something pleasant in compiling them together and could serve as a good base for inspiration in the time of need.
Fruits and berries.
Fruits are brilliant snacks in all of their forms and variations.
I turn to them immediately in the time of confusion and they've never let me down. Grapes, apples, strawberries, bananas, tangerines, etc. All you have to do is wash and enjoy. They are bright, yummy and nutritious.
Vegetables.
Vegetables can be just as fun and even more nutritious than fruits during lunch time. They are watery and refreshing, have a nice crunch and are insanely customizable.
You could have them plain, with salt or lime or mix 'em up and add some oil for a yummy salad. I would highly recommend them for "car food" as they are very low-mess and hardly have any sweetness to them, so nothing is sticky afterwards.
My daughter adores vegetables and has a great time picking which one she wants next.
Also, introducing them this way is a whole lot less boring than forcing them down with meals at home. Make them fun and adventurous and your kid will have them with pleasure.
Quick cooking.
If you need something a bit more filling and meal-like there are a couple of options you can try.
Steaming vegetables takes no time, especially if you get them frozen (it's more nutritious this way too). They are quite filling and yummy even without condiments. Green beans and broccoli are my daughter's all-time favourites.
Another quick thing is a salad. We really enjoy some veggies with olive oil and a mixture of salt, pepper, oregano and paprika. Seriously, if you haven't tried this, you are missing out.
I love putting some rice in salads for extra calories, but feel free to skip this if it's not your thing.
You can also add some tuna and a bit of mustard. This goes brilliantly with crackers.
Quesadillas are another favourite of my daughter's. Who can blame her, they are delicious. And take less than 3 minutes to make, so that's also highly appreciated.
Something a bit more time consuming, but absolutely worth it - sweet potatoes. Filling, nutritious and so good. I normally bake them in the oven (set a timer for 30-40 minutes and forget about them) with a little bit of salt and pepper. They get eaten almost immediately.
But if I'm especially lazy, I put them whole in the microwave for 6-7 minutes and they come out soft and steamy.
Another thing you can try is veggie pancakes. They can be made with grated vegetables or even mashed potatoes. I don't have a particular recipe for those, I literally search for it and pick the one I like the most or the one that I've got the ingredients for. It's an easy way to sneak some vegetables in kid's diet. Also, spoons and forks are optional, which is super convenient.
Lunch assembly.
If you fancy yourself an easy and lazy lunch, just combine some of those things together and you are good to go.
Just make sure you've got something filling (carbs and proteins) as well as nutritious and have a good variety of options.
Eating outside is also highly encouraged.
